~Christmas Tablescape & A Recipe~

The weather was so nice today it certainly didn't feel like a winters day in mid December. Darling Dear and I celebrated our 12th yr anniversary on the 11th. We had a most enjoyable weekend with dinner out, shopping and then we spent the evening playing games with Small Prince. The Lord has been so good to us and we are certainly blessed.


My parents recently came for an overnight visit so I set the table in red, turquoise and white, added some snowmen and made some taco soup with mexican cornbread and some tortilla chips, salsa and sour cream to accompany them. Ah, it was so good and might I add that we had red velvet cake for dessert!


Taco Soup: 
1 lb ground beef
1 16 oz can kidney beans
1 11 oz can niblet corn
1 small pkg taco seasoning
1 28 oz can tomatoes (I used diced tomatoes)
1 sm can chopped chile peppers
1 16 oz can pinto beans
1 sm pkg Hidden Valley Ranch Dressing


Brown the ground beef and drain. Add all other ingredients and stir (do not drain cans before adding). Simmer in crock pot on low for 6-8 hours. Serve with taco chips or mexican cornbread.

  5. Aledia!!!!!! GREAT chair ties!!! Beautiful color combination!!! I love those placemats. They would work well all year round! Now on this soup....are the pinto beans just regular pinto beans or are they the Mexican-style beans like you use in chili? The soup sounds good, and I'm always looking for something a little different. Also, do you think it would make a huge difference if I was to use ground turkey instead of ground beef? We're old and need to watch our red meat intake! :-)
